Here’s a simple and incredibly effective garlic soup recipe you can try:

Ingredients:

  • 50 peeled garlic cloves (around 5 bulbs)
  • 2 tbsp butter
  • 2 tbsp olive oil
  • 2 large onions, diced
  • 1 tbsp fresh thyme, chopped
  • 250 ml (8.5 oz) chicken broth
  • 1 bunch fresh herbs (parsley, thyme, bay leaf)
  • 3 cups stale bread, diced
  • 1 cup sour cream

Instructions:

  1. Preheat the oven to 180°C (350°F). Slice off the tops of the garlic bulbs, drizzle with olive oil, and wrap in foil. Roast for 90 minutes, then allow to cool slightly.
  2. While the garlic is roasting, heat butter and olive oil in a medium saucepan over medium heat. Sauté the onions for about 10 minutes until soft.
  3. Mash the roasted garlic and add it to the saucepan. Stir in chopped thyme, chicken broth, and fresh herbs.
  4. Lower the heat, add the bread cubes, and cook for 5 minutes, until they soften.
  5. Remove the herbs, then blend the mixture until smooth and creamy. Return to the saucepan and stir in sour cream. Season with salt and pepper to taste.
